When in Edinburgh, a trip to the Castle is an absolute must. The castle is up on a great height, and both the views from it and its surroundings are spectacular. You can see the whole city from up here, and its just beautiful. As everyone else has commented, entry is a bit on the expensive side, but its not everyday you get the chance to come see something so unique. Get headphones for the inside if you're in the money, but really you can manage just fine wandering around inside without using them. Without the headphones, you obviously will get around quicker! The staff are very helpful. Well worth a visit.
